Roasted Fingerling Potatoes and Carrots
- 2 lbs. fingerling potatoes
- 3 or 4 peeled and quartered carrots
- 1 tsp salt
- 1 tsp fresh cracked black pepper
- 1 tsp fresh chopped rosemary
- 3 tablespoons olive oil
Combine together. Spread on a roasting pan. I prefer an aluminum foil covered one to help with cleanup. Roast at 350*F for an hour.
