How to pick:

Look for peppers that have turned orange, red, or yellow. Ripe ones should pull off easily. The green ones have not fully ripened so leave them on the bush for next time.

Peppers do not need to be refrigerated and can be kept on the counter for several days. If planning to keep them for a longer period they can be put in tupperware in the frigdge.

Peppers are a good source of Thiamin, Niacin, Folate, Magnesium and Copper, and a very good source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin K, Vitamin B6, Potassium and Manganese.
